Thyme Pork Sweet Potato Hash

A quick, satisfying meal.

Ingredient List: Shredded Pork (this Citrus Cumin Pork Roast is perfect), Sweet Potatoes, Olive Oil, Thyme, Roasted Garlic Powder, Salt

Large dice the sweet potatoes (about one sweet potato for every two people), and sauté in olive oil for 5-7 minutes until tender and turning golden brown.

Add the shredded pork and spices and mix together till warm.

Serve on its own, with green salad, or over quinoa.
