Notes From Charlie – Week 24

“What are your favorite meals and snack combos you are now building partially on your own? Why?”

Fresh veggies in any combination are always going to be a favorite “go-to” for me.  My favorites right now are cucumbers, celery, and carrots diced up with a sprinkle of balsamic vinegar.  It’s very refreshing and a quick pick-me-up.  I’m very careful with carrots because of their sugar content, but just a little adds to the flavor and color of this mini salad.  I’ve been doing a lot of traveling lately and this salad is easy to prep ahead of time and grab on the go.  I also will add pumpkin seeds to it or a few almonds for a little protein.  

I also like to do a quick egg white scramble any time of the day, and add in diced scallions and small red, yellow, and orange peppers, and I’ve thrown a few pumpkin seeds in with the mix and it’s great.  I also combine leftover chicken and veggie items, or beans from various meals and put them all together over a nice mixed greens salad.  Variety is important and mixing it up is a great way to do that.
