A low effort crockpot meal that’s savory and sweet.

Ingredient List: Pork Roast, Yellow Onion, Garlic, Oranges, Lime, Chili con Carne, Cumin, Salt, Water
Slice the onion and crush the garlic (the flat of my chef knife works well for this) and place on the bottom of your crockpot.
Salt your pork roast on all sides and place on top of the onions. You can take an extra few moments and sear it first in cast iron, but for timing reasons, I often wait and sear the shredded pork just before eating.
Squeeze the juice of two oranges and one lime over the roast.
Generously dust with chili con carne and cumin.
Add water till it’s halfway up the roast. Cover and set the crockpot on low for 6 hours.
If necessary, add time in 1/2 hour increments until the roast falls apart when you try to pick it up.
Serve over a green salad or roast veggies, if you’re still grain free. Perfect with brown rice and pinto beans for a simple and satisfying meal.
