Chicken Green Bean Stir Fry

with coriander, garlic, and ginger.

Ingredient List: Chicken Breasts, Green Beans, Yellow Onion, Low Sodium Tamari Gluten Free Soy Sauce, Toasted Sesame Oil, Coriander, Ginger, Roasted Garlic Powder, Chinese Five Spice

If you’re cooking the chicken from scratch, dice it, toss it with soy sauce and some of each of the spices.

Heat up the wok to medium high, add some toasted sesame oil. Toss the chicken for 3-5 minutes until cooked through, then pull off the heat.

You can also use leftover “standard chicken”–chicken breasts cut into 2-3 palm size pieces, lightly spritzed with olive oil with a dash of salt and baked at 350F for 15-20 minutes. Works in all kinds of dishes–and freezes great, too! If this is the case, chop or shred the chicken, heat up the wok, add the oil and continue…

Add green beans–either fresh with the stems removed or frozen. Toss for 1-2 minutes until bright green, then add cooked chicken and a little more soy sauce and spices.

Remove from heat and serve immediately over brown rice.
