Chicken, Baby Kale, and White Bean Salad

enjoy hot or cold, filling and refreshing

Ingredient List: Standard Chicken, Cannellini or White Beans, Baby Kale, Olive Oil, White Wine Vinegar, Lemon, Thyme, Tarragon, Roasted Garlic Powder, Salt

Sear 1 breast worth of Standard Chicken briefly with olive oil, thyme to increase caramelization. Cool, then dice.

Slice ~5oz of baby kale and add to chicken.

Rinse a can of beans and add to kale and chicken.

Mix ~2T of olive oil, 1 tsp of white wine vinegar, the zest and juice of 1 lemon, 1 tsp of thyme, 1 tsp of tarragon, 1 tsp of roasted garlic powder, and a dash of salt.

Toss the salad with the dressing. It’s okay to dress this salad ahead of time because the kale can handle it and the flavors will meld in the fridge.
